How to prepare Puliogare / Tamarind rice?
Tamarind rice is a special dish which is made out of the following ingredients and which is cooked normally during festivals and other occasions.
Ingredients:
- Rice cooked – 2 cup
- Oil 1 tbsp.
- Salt to taste
- Pepper 1/2 tsp
- Turmeric powder pinch
- Tamarind pulp (around small lemon size ball)
- Jaggery / gudh -grated
- Sambar powder- 2 tbsp
- Curry leaves a few
- Peanuts – 2 tbsp
- Cashew nuts – 2 tbsp
- Mustard seeds- 1tsp
- Cumin seeds-1 tsp
- Asafoetida -pinch
- Urad dal – 1 tsp
- Fresh chiilies -1
- Dry chillies -1
Sambar powder Ingredients:
- Rice cooked – 2 cup
- Oil 1 tbsp.
- Salt to taste
- Pepper 1/2 tsp
- Tamarind pulp (around small lemon size ball)
Procedure:
For making Sambar powder:
- On medium heat roast all the ingredients for sambar powder together untill golden brown and keep aside. Once its cool then make a powder in a grinder and keep aside
For making puliogare rice:
- Cook the rice seperately and keep aside
- In a thick bottomed pan add oil on medium high heat , once the oil is hot enough add mustard seeds, cumin seeds urad dal and asafoetida untill splatters
- To the above mixture add peanuts and cashew nuts and fry till golden brown
- To the above add the curry leaves and chillies both the dry and fresh chillies
- Once fried add the tamarind pulp to the pan and add some water to it
- Let the above mixture boil for few minutes and then add salt ,pepper and sambar powder and let it boil
- The mixture will start to thicken now add the jaggery and once it melts completely in to the mixture remove the pan from heat
- To the above mixture and the cooked rice and mix it well The puliogare is ready to be served to the Lord and then ready to eat.
